Method
Preheat the oven.
- Preheat your oven to 400°F (200°C). Lightly grease a large baking dish.
Prepare the chicken.
- Pat the chicken breasts dry with paper towels. If they are particularly thick, gently pound them to an even thickness. Season both sides with ½ teaspoon salt, black pepper, and dried thyme.
Brown the chicken.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken and cook for about 3–4 minutes per side, until nicely browned. The chicken does not need to be cooked through yet. Transfer it to a plate.
Caramelize the onions.
- Reduce the heat to medium-low and add the butter to the same skillet. Add the sliced onions and the remaining ½ teaspoon salt. Cook for approximately 25–30 minutes, stirring occasionally, until the onions are soft and deeply golden brown. If they begin sticking, add a small splash of the chicken broth and scrape the bottom of the pan.
Add the garlic and sauce.
- Stir in the minced garlic and cook for about 1 minute. Pour in the remaining chicken broth and Worcestershire sauce. Stir well, scraping up any browned bits from the bottom of the skillet. Simmer for 3–5 minutes.
Assemble the casserole.
- Place the browned chicken breasts in the prepared baking dish. Spoon the caramelized onions and sauce evenly over the chicken.
Add the cheese.
- Sprinkle the shredded Gruyère evenly over the chicken and onions.
Bake.
- Bake uncovered for approximately 15–20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and bubbling.
Brown the cheese.
- For a more golden topping, switch the oven to broil for 1–2 minutes. Watch it carefully so the cheese doesn't burn.
Rest and serve.
- Remove the casserole from the oven and let it rest for 5 minutes. Garnish with fresh parsley if desired, then serve hot.
