Cut the chicken into bite-sized pieces and season with paprika, garlic powder, onion powder, approximately 1 teaspoon salt, and 1/2 teaspoon black pepper.
Cut the potatoes into evenly sized pieces and season with the remaining salt and pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the potatoes and cook for 10 to 15 minutes, turning occasionally, until golden and beginning to become tender. Transfer to a plate.
Add the remaining olive oil if needed. Add the chicken pieces in a single layer and cook for approximately 3 to 5 minutes per side, until browned and cooked through.
Reduce the heat to medium and add the butter.
Once melted, add the minced garlic, Italian seasoning, and red pepper flakes. Cook for 30 to 60 seconds until fragrant.
Return the potatoes to the skillet and toss everything together.
Cook for another 2 to 3 minutes, or until the potatoes are completely tender and coated in garlic butter.
Remove from the heat and toss with fresh parsley and optional lemon juice.
Serve immediately.
